Slow cooked sausage & haricot beans
Reduced fat pork sausages, grilled
1 medium, chopped
2 stick(s), sliced
2 medium, sliced
2 can(s), large
Haricot Beans, cooked
2 can(s), large, drained
Chicken stock cube(s)
1 cube(s), or vegetable, make up to 200ml in hot water
Dried Mixed Herbs
Bay leaf, dry
1 pinch, freshly ground
4 sprig(s), fresh, chopped, to garnish
- Preheat the grill. Arrange the sausages on the grill rack and cook for 10-15 minutes, turning often, until browned. Slice each sausage into three pieces. Transfer to the slow cooker or a large saucepan.
- Add the onion, celery, carrots, tomatoes, haricot beans, stock and herbs. Season with black pepper. Cover and cook on high for 5 hours if using a slow cooker. If cooking on the hob, cover and simmer gently for 1 hour, adding extra stock or water if needed. Serve, sprinkled with parsley, if using.
