Perfect for making in your slow cooker, or just simmer on top of the hob.

Ingredients

Reduced fat pork sausages, grilled

8 medium

Onion(s)

1 medium, chopped

Celery, Raw

2 stick(s), sliced

Carrots, raw

2 medium, sliced

Tinned Tomatoes

2 can(s), large

Haricot Beans, cooked

2 can(s), large, drained

Chicken stock cube(s)

1 cube(s), or vegetable, make up to 200ml in hot water

Dried Mixed Herbs

1 tablespoons

Bay leaf, dry

1 leaf/leaves

Black pepper

1 pinch, freshly ground

Parsley, fresh

4 sprig(s), fresh, chopped, to garnish

Instructions

  1. Preheat the grill. Arrange the sausages on the grill rack and cook for 10-15 minutes, turning often, until browned. Slice each sausage into three pieces. Transfer to the slow cooker or a large saucepan.
  2. Add the onion, celery, carrots, tomatoes, haricot beans, stock and herbs. Season with black pepper. Cover and cook on high for 5 hours if using a slow cooker. If cooking on the hob, cover and simmer gently for 1 hour, adding extra stock or water if needed. Serve, sprinkled with parsley, if using.
