Sesame Pork Skewers with Chilli Stir Fry

Lean pork chunks marinated in hoisin sauce taste delicious with a colourful, healthy stir fry.


Ingredients
Pork loin steak, lean, raw
400 g, cut into chunks
Hoisin Sauce
2 tablespoon(s)
Calorie controlled cooking spray
5 spray(s)
Egg noodles, dry
130 g
Garlic
1 clove(s), crushed
Root Ginger
1 teaspoon(s), fresh
Chilli, green or red
1 individual, deseeded and thinly sliced
Spring Onions
4 medium, thinly sliced
Red pepper
1 medium, deseeded and thinly sliced
Yellow pepper
1 medium, deseeded and thinly sliced
Beansprouts
300 g
Pak Choi
2 portion(s), roughly chopped
Sesame Seeds

Put the pork chunks into a bowl (not a metal one) and add the hoisin sauce, tossing to coat. Cover and chill for at least 30 minutes, or up to 24 hours.

When ready to cook, soak 8 wooden kebab sticks in hot water for 5-10 minutes to prevent them from burning. Put the noodles into a heatproof bowl, cover with boiling water, then leave to soak for 10 minutes.

Preheat the grill. Thread the chunks of pork onto the kebab sticks. Arrange on the grill rack and cook for 10-12 minutes, turning often.

Meanwhile, spray a wok or large frying pan with low fat cooking spray. Add the garlic, chilli, spring onions and peppers and stir-fry for 3-4 minutes. Add the beansprouts and pak choi and stir-fry for a further 3-4 minutes. Drain the noodles thoroughly and add them to the vegetables, stirring them through gently.

Share the stir fry between 4 warmed bowls or plates and serve with the kebabs, sprinkled with sesame seeds.
