Roasted green beans with toasted hazelnuts & shaved Parmesan

Packing a festive flavour punch, this impressive side dish uses seasonal ingredients to great effect

Ingredients

Hazelnuts

45 g

Green Beans

1125 g, ends trimmed

Olive Oil

2 tablespoon(s)

Parmesan Cheese

25 g, shaved

Lemon

1 medium, cut into wedges

Instructions

  1. Preheat your oven to 220°C, fan 200°C, gas mark 7. Spread the hazelnuts on a small baking tray and then transfer to the oven. Roast for 3-4 minutes, until golden brown. Remove from the oven and allow to cool slightly. Coarsely chop and set aside.
  2. Divide the green beans between two rimmed baking trays. Drizzle each with the oil. Season and toss to coat, spreading out the beans in an even layer.
  3. Roast the beans, stirring once or twice, for 25-30 minutes, until they start to brown. Transfer to a serving plate, and sprinkle over the nuts and cheese. Serve with the lemon wedges.

Notes

To make this veggie, replace the Parmesan with vegetarian Italian-style hard cheese
