Roast salmon with za'atar
½ zest(s) of 1, grated
4 fillet(s), medium

New potatoes, raw
800 g, quartered
1 teaspoons, level
½ teaspoons, level, plus extra to serve
2 tablespoons, leaves picked, to serve
- Preheat the oven to 200°C, fan 180°C, gas mark 6. Sprinkle the za’atar and lemon zest over the salmon and rub in to coat, then set aside.
- Mist the potatoes with cooking spray, season well and toss together with the cumin and chilli powder. Put in a roasting tin and roast for 25 minutes.
- Stir the potatoes, then put the salmon fillets on top and cook for another 20 minutes. Scatter over the parsley leaves and sprinkle over the extra chilli powder, then serve.
