Roast salmon with za'atar

This simple dish is packed with flavour. Za’atar is a blend of spices and sesame seeds that’s nutty and fragrant. Plus, slow-roasting the fish keeps it tender and succulent.


Ingredients
Za'atar seasoning
1 tablespoon(s)
Lemon
½ zest(s) of 1, grated
Salmon, raw
4 fillet(s), medium
Calorie controlled cooking spray
4 spray(s)
New potatoes, raw
800 g, quartered
Ground Cumin
1 teaspoon(s), level
Chilli Powder
½ teaspoon(s), level, plus extra to serve
Parsley, fresh
2 tablespoon(s), leaves picked, to serve

Preheat the oven to 200°C, fan 180°C, gas mark 6. Sprinkle the za’atar and lemon zest over the salmon and rub in to coat, then set aside.

Mist the potatoes with cooking spray, season well and toss together with the cumin and chilli powder. Put in a roasting tin and roast for 25 minutes.

Stir the potatoes, then put the salmon fillets on top and cook for another 20 minutes. Scatter over the parsley leaves and sprinkle over the extra chilli powder, then serve.
