How to get this tasty family favourite on the table in half an hour? By using a few clever cheat’s ingredients, cooking it on the hob, and finishing it under the grill. Easy.

Ingredients

Calorie controlled cooking spray

Extra lean beef mince (5% fat), raw

500 g

Waitrose Cooks' Ingredients Soffritto Mix

300 g, (diced celery, carrot and onion)

Plain White Flour

15 g

Beef stock cube(s)

1 cube(s), to make 375ml beef stock

Worcestershire Sauce

2 teaspoons

Sainsbury's Mashed Potato

800 g, 2 x 400g packs

Broccoli, raw

320 g, tenderstem

Instructions

  1. Mist a 24cm ovenproof nonstick pan with cooking spray and brown the beef for 5 minutes over a medium-high heat, breaking up any lumps with a wooden spoon. Add the diced vegetables and cook for 5 minutes, stirring often.
  2. Sprinkle the flour over the meat and vegetables, stirring to coat, then stir in the stock and Worcestershire sauce. Reduce the heat and simmer for 5 minutes until the sauce is thickened. Season to taste, then remove from the heat.
  3. Meanwhile, preheat the grill to high. Cook the mashed potato in the microwave to pack instructions. Spoon the mash over the beef mixture and use a fork to level it and create a pattern. Season, then cook under the grill for 5 minutes until the potato is crisp and golden.
  4. While the pie is grilling, steam the broccoli for 5 minutes, until tender. Serve with the cottage pie.

Notes

Pre-cooked mash potato comes fresh or frozen. Just keep an eye on the SmartPoints – some brands contain greater amounts of butter and oil
