Instant Coffee

Semi Skimmed Milk
180 ml
Pumpkin puree
40 g
Mixed Spice
½ teaspoon(s), level
Honey
1 teaspoon(s), level
Star Anise
½ individual
Cinnamon Stick
1 stick(s)
Ground Nutmeg

Make the espresso by combining the espresso powder with 60ml freshly boiled water and set aside.

Put the pumpkin purée and mixed spice into a small pan. Cook for 1 minute until the mixture smells aromatic. Whisk in the milk and honey. Heat until very hot but not boiling. Whisk in the espresso, then transfer to a blender and blend on High for 1 minute or until very frothy.

Pour into a mug using a spoon to hold back the foam, then pile it on at the end. Garnish with the star anise, cinnamon stick and a grating of fresh nutmeg.
