Peanut pork with wild rice
Reduced Fat Peanut Butter
3 tablespoons, reduced salt
1 clove(s), crushed
2 inch slice(s), peeled and grated
Pork Loin Steak, Lean, raw
350 g, diced
Wild rice, dry
Peas, frozen, boiled
Calorie controlled cooking spray
Peppers, All Types
2 medium, red and green, deseeded and sliced
Chilli, Green or Red
1 individual, red, finely chopped
4 medium, trimmed and sliced
1 medium, to serve
- Combine the peanut butter, soy sauce, garlic and ginger. Toss with the pork in a bowl and marinate in the fridge for 30 minutes or overnight.
- Cook the rice to pack instructions, adding the peas for the last 2 minutes.
- Mist a frying pan with cooking spray. Fry the pork for 3-4 minutes, add the peppers and a splash of water and cook for another 3-4 minutes, until the pork is cooked through.
- Serve the rice and peas with the pork, garnished with the chilli and spring onions, with lime wedges on the side.
