Peanut pork with wild rice

Ingredients
Reduced Fat Peanut Butter
50 g
Soy Sauce
3 tablespoon(s), reduced salt
Garlic
1 clove(s), crushed
Root Ginger
2 inch slice(s), peeled and grated
Pork loin steak, lean, raw
350 g, diced
Wild rice, dry
160 g
Peas, frozen, boiled
100 g
Calorie controlled cooking spray
4 spray(s)
Peppers, all types
2 medium, red and green, deseeded and sliced
Chilli, green or red
1 individual, red, finely chopped
Spring Onions
4 medium, trimmed and sliced
Lime
1 medium, to serve

Combine the peanut butter, soy sauce, garlic and ginger. Toss with the pork in a bowl and marinate in the fridge for 30 minutes or overnight.

Cook the rice to pack instructions, adding the peas for the last 2 minutes.

Mist a frying pan with cooking spray. Fry the pork for 3-4 minutes, add the peppers and a splash of water and cook for another 3-4 minutes, until the pork is cooked through.

Serve the rice and peas with the pork, garnished with the chilli and spring onions, with lime wedges on the side.
