Here is a classic Spanish dish bursting with flavour and colour, made healthier!


Ingredients
Potatoes, Raw
400 g, diced
Olive Oil
2 teaspoon(s)
Onion
1 medium, diced
Chilli, green or red
1 individual, deseeded and finely chopped
Garlic
2 clove(s), finely chopped
Paprika
½ teaspoon(s), level, smoked
Tinned Tomatoes
½ can(s), large
Instructions

Put the potatoes in a pan of cold water. Bring to the boil, reduce to a simmer and cook for 10–12 minutes.

Heat 1 tsp oil in a pan and cook the onion for 5–10 minutes. Add the chilli, garlic and paprika for the last minute. Add the tomatoes; bring to a simmer. Cook for 10 minutes or until thickened.

Heat the remaining oil in a pan over a medium heat and fry the potatoes for 10 minutes or until golden. Serve with the tomato sauce spooned on top.
