Here is a classic Spanish dish bursting with flavour and colour, made healthier!

Ingredients

Potatoes, Raw

400 g, diced

Olive Oil

2 teaspoon(s)

Onion

1 medium, diced

Chilli, green or red

1 individual, deseeded and finely chopped

Garlic

2 clove(s), finely chopped

Paprika

½ teaspoon(s), level, smoked

Tinned Tomatoes

½ can(s), large

Instructions

  1. Put the potatoes in a pan of cold water. Bring to the boil, reduce to a simmer and cook for 10–12 minutes.
  2. Heat 1 tsp oil in a pan and cook the onion for 5–10 minutes. Add the chilli, garlic and paprika for the last minute. Add the tomatoes; bring to a simmer. Cook for 10 minutes or until thickened.
  3. Heat the remaining oil in a pan over a medium heat and fry the potatoes for 10 minutes or until golden. Serve with the tomato sauce spooned on top.

Notes

Paprika is widely used in Spanish cooking. Choose either hot or sweet paprika to add wonderful flavour and colour.
