Ingredients

Skimmed Milk

600 ml, (1 pint)

Orange

2 medium

Semolina, Dried

85 g, ground

Ground Nutmeg

teaspoon(s), level

Artificial sweetener

3 tablespoon(s), powdered

Egg, whole, raw

1 medium, raw, beaten

Instructions

  1. Preheat the oven to Gas Mark 4/180°C/fan oven 160°C/350°F. Spray a 1 litre baking dish with low fat cooking spray.
  2. Put the milk and finely grated zest from 1 orange into a nonstick saucepan. Sprinkle in the semolina and heat until boiling, stirring constantly to give a smooth, thick mixture. Cook for 2 minutes, stirring all the time. Remove from the heat.
  3. Add the juice from 1 orange, stirring to mix. Cool for about 10 minutes, stirring from time to time to prevent a skin from forming. Add a pinch of nutmeg, the sweetener and beaten egg, stirring well. Transfer to the baking dish. Sprinkle a little more nutmeg over the surface.
  4. Bake for 25-30 minutes until lightly browned on the surface. Meanwhile, cut the remaining orange into segments, removing all the peel and pith. Serve with the semolina pudding.
