One of the best things about an open-faced sandwich is that it makes you feel like you’re getting a lot more food than a single-stacked one. Bagel thins help keep the Points low, while the accompanying fruit salad fills out the plate.

Ingredients

Calorie controlled cooking spray

4 spray(s)

Egg, whole, raw

2 large, raw

Dijon Mustard

1½ teaspoon(s), level

Soft seeded bagel thins

1 individual

Tomato

½ medium, sliced

Avocado

¼ medium, thinly sliced

Pickled onions (no added sugar), drained

2 small, sliced

Fresh Fruit Salad (no added sugar)

Instructions

  1. Mist a nonstick pan with cooking spray and put over a medium heat. Crack the eggs into the pan and cook for 3 to 5 minutes. Season the eggs to taste with salt and pepper.
  2. Spread ¾ tsp mustard over each bagel half; evenly layer the tomato, avocado, eggs, and pickled onions over the bagel halves. Serve with the fruit salad.
