Calorie controlled cooking spray
1 medium, finely chopped

- Preheat the grill to high. Mist a 20cm ovenproof frying pan with cooking spray. Cook the shallot over a medium-high heat for 30 seconds, then add the garlic , ginger and curry powder and cook for another minute.
- Add the frozen mixed veg and a splash of water and cook for 2-3 minutes more.
- Pour in the beaten eggs and cook for 1-2 minutes, or until nearly set. Cook under the grill for 1-2 minutes, until risen and golden. Fold the omelette and serve with coriander and yogurt.
