Unlike the tinned variety, there’s no added sugar in these baked beans, making it healthier than the storecupboard staple

Ingredients

Calorie controlled cooking spray

4 spray(s)

Red onion

1 small, finely sliced

Bacon medallions, raw

100 g, chopped

Garlic

2 clove(s), finely chopped

Paprika

1½ teaspoon(s), level, smoked

Mustard Powder

1½ teaspoon(s), level

Ground Cumin

1 teaspoon(s), level

Tomato Purèe

1 tablespoon(s), level

Tinned Tomatoes

1 can(s), large

Vegetable stock cube

½ cube(s), crumbled

Thyme, Fresh

1 sprig(s)

Haricot Beans, cooked

1 can(s), large, drained, drained and rinsed

Cannellini Beans, cooked

1 can(s), large, drained, drained and rinsed

Brown sandwich thins

4 individual, halved and toasted, to serve

Instructions

  1. Mist a pan with cooking spray and cook the onion over a medium heat for 6-8 minutes, until soft.
  2. Add the bacon and fry for 3-4 minutes, then add the garlic and spices and cook for 1 minute. Add the tomato purée and cook, stirring, for 1 minute before stirring in the tomatoes and stock cube. Season and simmer for 15 minutes. Add the beans, season, and cook for a final 5 minutes.
  3. Spoon over the sandwich thins to serve.

Notes

Want even more flavour? Add 1 tbsp barbecue sauce to the bean mix.
