Ingredients

Wholewheat noodle nests, dry

Sesame Oil

½ teaspoon(s)

Duck Breast, Skinless, raw

180 g

Calorie controlled cooking spray

4 spray(s)

Pak Choi

100 g

Broccoli, raw

200 g

Sugar Snap Peas

200 g

Soy Sauce

2 tablespoon(s)

Rice Wine Vinegar

15 ml

Hoisin Sauce

1½ tablespoon(s)

Instructions

  1. Cook the noodles to pack instructions. Drain, toss with the oil and set aside.
  2. Meanwhile, mist a large, deep frying pan or wok with cooking spray and fry the duck for 3-4 minutes, until seared but still pink in the middle. Remove from the pan and set aside to rest.
  3. Add all the remaining ingredients (except the hoisin sauce) to the pan. Stir-fry over a medium-high heat for 4-5 minutes until the veg is tender.
  4. Add the noodles and return the duck to the pan. Stir-fry for 2-3 minutes, until heated through.
  5. Divide between bowls and serve drizzled with the hoisin sauce.
