Herring, apple & dill salad
New potatoes, raw
1 large, red, thinly sliced
2 medium, red, cored and sliced
Pickled Gherkins, drained
4 large, or 1 large dill pickle, thinly sliced
Fat Free Natural Yogurt
1 tablespoons, chopped
300 g, (4 x 75g soused herring fillets)
1 pinch, and freshly ground black pepper
4 teaspoons, sprigs, to garnish
- Simmer the potatoes in lightly salted boiling water, until tender. They will take about 20 minutes to cook.
- Put the onion, apples, gherkins or dill pickle, yogurt and chopped fresh dill into a bowl and stir together gently.
- Break the herring fillets into large chunks and add them to the apple mixture. Fold everything together to mix gently.
- Toss the hot new potatoes through the herring salad, then serve, garnished with sprigs of dill.
