This simple salad is perfect for a light summer meal or picnic, or for a summer buffet dish.

Ingredients

New potatoes, raw

750 g

Onion

1 large, red, thinly sliced

Apple

2 medium, red, cored and sliced

Pickled gherkins, no added sugar

4 large, drained, or 1 large dill pickle, thinly sliced

Fat Free Natural Yogurt

150 g

Dill, Fresh

1 tablespoon(s), chopped

Herring, raw

300 g, (4 x 75g soused herring fillets)

Salt

1 pinch, and freshly ground black pepper

Dill, Fresh

4 teaspoon(s), sprigs, to garnish

Instructions

  1. Simmer the potatoes in lightly salted boiling water, until tender. They will take about 20 minutes to cook.
  2. Put the onion, apples, gherkins or dill pickle, yogurt and chopped fresh dill into a bowl and stir together gently.
  3. Break the herring fillets into large chunks and add them to the apple mixture. Fold everything together to mix gently.
  4. Toss the hot new potatoes through the herring salad, then serve, garnished with sprigs of dill.

Notes

If you prefer, let the potatoes cool before you stir them through the salad.
