Ham & potato salad

Ingredients
New potatoes, raw
225 g, halved if large
Wafer thin ham
40 g, (4 slices)
Spring Onions
3 medium, chopped
Celery, Raw
1 stick(s), sliced
Cherry Tomatoes
100 g, halved
Pickled gherkins, no added sugar
25 g, drained, or cornichons, chopped
Parsley, fresh
1 tablespoon(s), chopped
Quark, fat free, plain
25 g
Dijon Mustard
1 teaspoon(s), level
Instructions

Boil the potatoes for 12–15 mins or until tender.

Meanwhile, chop the ham and place in a bowl with the spring onions, celery, tomatoes, cornichons and parsley. Drain the potatoes and add to the bowl. Toss to mix.

Stir in the Quark and mustard. Serve warm, or store in a tub in the fridge for up to 24 hours.
