Garlic & herb chicken
This one-pot bake takes just a few minutes to prepare.
New potatoes, raw
800 g, halved
Chicken breast, skinless, raw
1 medium, sliced into wedges
- Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the potatoes, garlic and the herbs into a roasting tin. Toss together with the oil and season to taste. Cover with foil and bake for 30 minutes.
- Add the chicken fillets and cook, uncovered, for another 20-25 minutes, until cooked through and golden. Add the lemon wedges to the tin, squeezing over some of the juice, then serve.
