Fragrant beef skewers with roti

Marinated in a blend of tamarind, garlic, coriander and soy sauce, the fragrance from the skewers as they cook puts the ‘tempt’ in temptation.

160 g, 150g + 10g extra for dusting

Vegetable Oil

Beef sirloin steak, lean, raw

500 g, cut into 1cm-wide strips

Garlic

2 clove(s), crushed

Ground coriander

2 teaspoon(s), level

Soy Sauce

2 tablespoon(s), dark

Lime

2 zest(s) of 1, zest

Cucumber

1 individual, extra large, sliced

Chilli, green or red

½ individual, red, deseeded & diced

Coriander, fresh

30 g, chopped

Spring Onions

2 medium, chopped

Lime Juice, Fresh

Start by making the roti. Sift 150g flour and the salt into a bowl and add the vegetable oil with 100ml water or just enough to make a sticky dough. Turn the dough out onto a lightly floured surface and knead until smooth. Cover and leave to rest for 30–40 minutes.

Meanwhile, marinate the beef by simply putting it into a bowl and adding the tamarind paste, crushed garlic, ground coriander, soy sauce and lime zest. Mix well and leave to marinate for 30 minutes.

Divide the dough into four and, using a rolling pin, roll each piece into a thin circle about 2mm thick on a floured surface. Set aside while you make the cucumber salad.

To make the cucumber salad, put the cucumber, red chilli, fresh coriander, spring onion and lime juice into a bowl and lightly toss together.

Mist a large frying pan with cooking spray and once hot, fry a roti until it puffs up and is speckled brown on the underside. Turn it over and fry for a few minutes. Remove from the pan, allowing the roti to cool for a few seconds, and wrap in a clean tea towel placed in a colander until ready to eat. Cook the other roti.

Heat a griddle pan over a high heat. Thread the beef onto skewers and cook on all sides for 2–3 minutes or until lightly charred.
