A plate of potato gnocchi is the kind of dish that’s perfect for lazy weekends. We’ve pan-fried them for extra crunch then tossed them with ham and a trio of crunchy veg.

Ingredients

Calorie controlled cooking spray

8 spray(s)

Gnocchi, Fresh

600 g

Cabbage

80 g, shredded

Leek

1 medium, trimmed and finely sliced

Brussels sprouts, raw

100 g, trimmed and finely sliced

Garlic

3 clove(s), thinly sliced

Chicken stock cube(s)

½ cube(s), 200ml hot chicken stock

Wholegrain Mustard

2 teaspoon(s), level

Gammon/ham joint, boiled

90 g, shredded ham hock

Parmesan Cheese

20 g, finely grated

Instructions

  1. Mist a large nonstick frying pan with cooking spray and set over a medium heat. Add the gnocchi and cook, turning occasionally, for 5-6 minutes until lightly golden, then transfer to a plate.
  2. Mist the pan with more cooking spray, then stir-fry the cabbage, leek, sprouts and garlic for 5 minutes until tender and lightly golden.
  3. Stir in 200ml chicken stock, mustard and ham hock, and simmer for 2 minutes, then return the gnocchi to the pan and stir until combined and heated through.

Notes

If you’re not a fan of Brussels sprouts, you can simply leave them out and bump up the quantities of cabbage and leek.
