Fancy a delicious dip to enjoy with fresh vegetable crudités? Then try this tasty little number.
Ingredients

Carrots, raw

500 g, sliced

Vinegar, All Types

¼ teaspoons, a few drops

Calorie controlled cooking spray

10 spray(s)

Garlic

1 teaspoons, chopped, puree

Tomato Purèe

1 tablespoons, level

Medium fat soft cheese

125 g

Hot Pepper Sauce (Tabasco)

¼ teaspoons

Ground Cumin

¼ teaspoons, level

Coriander, Dried

¼ teaspoons, level

Salt

1 pinch, and black pepper, freshly ground

Instructions

  1. Boil carrots in lightly salted water until really tender - about 20 minutes. Drain well and allow to cool in a colander.
  2. Put carrots in a blender or food processor with all remaining ingredients. Blend for 15-20 seconds, until smooth. Check seasoning, adding salt, pepper and more Tabasco or spices, to taste.
  3. Tip dip into a bowl and serve with vegetable crudités. Use a selection of veg like peppers and cucumber, sliced into sticks.
