Ingredients

Fat Free Natural Yogurt

125 g

Lemon Juice, Fresh

45 ml

Lemon(s)

1 zest(s) of 1

Vinegar, All Types

2 tablespoons, cider vinegar

Coriander, fresh

2 tablespoons

Cabbage

200 g

Carrots, raw

2 medium, grated

Spring Onions

6 medium, shredded or sliced

Apple(s)

1 medium, green apple

Instructions

  1. Whisk together the yogurt, lemon zest, lemon juice, cider vinegar and the coriander, the grated zest and season to taste.
  2. Shred half a white cabbage and put it into a serving bowl, along with 2 grated carrots and shredded spring onions.. Drizzle over the dressing and mix well.
  3. Core the apple, then cut into matchsticks. Stir through the salad just before serving.
