Classic roast turkey

This recipe is all about the turkey! Serve the perfect bird on the big day.

Onion(s)1 medium, peeled
Bay leaf, dry4 leaf/leaves
Thyme, Fresh4 sprig(s), and sage leaves
Lemon(s)1 medium, halved
- Take the turkey out of the fridge 1 hour before putting in the oven to get the meat to room temperature. Preheat the oven to gas mark 4/180°C/fan 160°C. Put the turkey breast side-down on a rack in a large roasting tray. Season the cavity and put the onion, clementine and herbs inside. Squeeze the lemon over the turkey and put the squeezed halves in the cavity too. Season the top of the turkey, add a wine glass of water to the tin, and put in the oven for 1 hour 45 minutes.
- Carefully turn the turkey over. Return to the oven for another 30 minutes or until the turkey is cooked through (adjust cooking times depending on the weight of your turkey). Let the turkey rest in a warm place for up to 1 hour, then carve and serve 90g turkey per person to equate to 2 SmartPoints values per serving (an equal mixture of white and dark meat).
