Ingredients

HECK Zesty Chicken Sausages

8 sausage(s), grilled

Olive Oil

1 tablespoon(s)

Tinned Tomatoes

2 can(s), large, chopped

Cajun seasoning

1 tablespoon(s)

Cumin seeds

1 tablespoon(s), level

Chipotle paste

20 g

Lime Juice, Fresh

60 ml

Cooked mixed vegetables

400 g, frozen veg

Spinach

50 g, young leaf

Kidney Beans, cooked

2 can(s), large, drained

0% fat natural Greek yogurt

4 tablespoon(s), to serve

Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the sausages in a large, deep roasting tin, drizzle over the oil and toss to coat. Roast for 15 minutes until the sausages start to turn golden, then cut each sausage into 3 equal pieces. Return to the tin and stir in the tomatoes, Cajun seasoning, cumin seeds, chipotle paste, lime juice, frozen veg, spinach and beans.

Cover the tin with kitchen foil, scrunching it tightly around the edges so no steam can escape. Roast for 30-40 minutes until the sauce is bubbling and the vegetables are tender. Season and stir again, then serve topped with the yogurt.
