Chilled cucumber & herb soup

Fresh herbs, cucumber and low fat soft cheese give this light chilled soup its lovely texture and flavour.
8 medium, , finely chopped
Fresh Vegetable Stock
1 tablespoons, lemon thyme
Low Fat Soft Cheese
200 ml, , chilled
- Put the spring onions and stock into a saucepan. Heat and simmer for 15 minutes. Remove the pan from the heat.
- Reserve a few herbs and 8 thin slices of cucumber for garnish, then add the rest to the saucepan with the soft cheese and milk. Blend with a hand-held stick blender, or transfer to a liquidizer and blend until smooth. Cover and chill for several hours, or overnight.
- Serve the soup, garnishing each portion with 2 slices of cucumber and the reserved herbs.
