Ingredients

Calorie controlled cooking spray

Courgette

2 medium, roughly chopped

Chicken breast, skinless, grilled

300 g, roughly chopped

Green Pesto

50 g

Cannellini Beans, cooked

2 can(s), large, drained

Breadcrumbs, fresh

100 g

Parsley, fresh

2 tablespoons, chopped

Vegetable Oil

2 tablespoons

Garlic Powder

½ teaspoon, level

Instructions

  1. Mist a 25cm ovenproof frying pan cooking spray and set it over a medium-high heat. Add the chopped courgettes and cook for 5 minutes until golden and starting to soften. Stir in 120ml water, the chopped cooked chicken, green pesto and beans, season to taste.
  2. Cook for another 2 minutes until the sauce thickens, adding a splash more water if the mixture seems too dry. Preheat the grill to low. In a medium bowl, combine the breadcrumbs, chopped fresh flat-leaf parsley, oil, and ½ teaspoon garlic granules.
  3. Scatter the crumb mixture over the chicken and bean mixture. Transfer to the grill and cook for 1-2 minutes until the topping is toasted. Garnish with extra parsley and serve.
