Chicken Caesar pasta salad

This classic Caesar salad is made more substantial by adding wholewheat pasta.


Chicken breast, skinless, raw

500 g

Olive Oil

1 tablespoons

Wholewheat Pasta, dry

200 g

Anchovies in oil, drained

50 g, and chopped

Cherry Tomatoes

200 g, halved


150 g, roughly chopped


100 g, roughly torn

Low Fat Caesar Salad Dressing

80 ml

Parmesan Cheese

15 g, shaved


  1. Put the chicken breast fillets between 2 pieces of cling film and beat with a rolling pin until completely flattened.
  2. Put a frying pan or griddle pan over a medium heat. Rub the chicken with the olive oil and cook for 5 minutes on each side, or until cooked through. You may need to do this in batches. Remove from the pan and cut into thick strips.
  3. Meanwhile, bring a pan of water to the boil and cook the pasta until al dente. Drain and cool under cold running water.
  4. In a bowl, toss the pasta with the chicken, anchovies, tomatoes, cucumber and lettuce. Drizzle over the dressing and serve garnished with the parmesan shavings.
