Cheese & gherkin toastie
Low Fat Soft Cheese
2 medium, finely diced
4 teaspoons, level
Pickled Gherkins, drained
5 small, 1, drained and finely chopped, plus 4 extra gherkins, sliced, to serve.
Farmhouse White Bread

- In a small bowl, combine the soft cheese, shallots, mustard and chopped gherkin, then season to taste
- Spread the mixture over each of the 8 slices of bread. Scatter the grated cheese over 4 of the bread slices then sandwich with the remaining bread, soft-cheese-side down.
- Mist a large nonstick frying pan with cooking spray then set over a medium heat. Cook the sandwiches for 2-3 minutes on each side until the bread is lightly toasted and the cheese has melted – you may need to do this in batches. Serve with the extra sliced gherkins on the side.
