Serve these hearty veggie patties with fresh mint and soured cream for extra wow factor

Ingredients

Sweet potato, raw

300 g, chopped

Potatoes, Raw

250 g, chopped

Carrots, raw

2 medium, grated

Green or Brown Lentils, cooked

1 can(s), large, drained, drained and rinsed

Calorie controlled cooking spray

4 spray(s)

Reduced fat soured cream

60 ml

Mint, Fresh

1 tablespoon(s), chopped

Instructions

  1. Boil, steam or microwave the sweet potato and potato until tender. Drain, then mash in a large bowl. Add the carrot and lentils and mix until combined. Season, then wet your hands and form the mixture into 12 patties.
  2. Mist a large nonstick frying pan with cooking spray and heat over a medium heat. Cook the burgers for 4 minutes on each side, or until golden and heated through.
  3. Mix the soured cream and mint together in a small bowl and serve alongside the burgers.
