Butternut noodles with apple & turkey

1¼ teaspoons, level
100 g, spiralised
½ medium, Gala
1 medium, sliced
Turkey breast, skinless, grilled
Chicken stock cube(s)
½ cube(s), 100ml stock
1½ teaspoons, finely chopped
½ teaspoons, zest
20 g, toasted, chopped
- Mist a nonstick frying pan with cooking spray. Add 1⁄2 tsp spread and melt over a medium heat. Add the butternut noodles, apple and shallot. Cover and cook for 3 minutes, stirring occasionally, until the noodles start to soften.
- Stir in the turkey, 60ml stock and thyme and season. Cook for 3 minutes more, until the noodles are tender. Add the remaining spread and lemon zest, with a splash more stock if dry. Sprinkle over the walnuts and serve.
