Baked balsamic strawberries with waffles
2 tablespoons, level
500 g, hulled and halved
0% fat natural Greek yogurt
Half Fat Crème Frâiche
½ teaspoons, level
WW Wholemeal Belgian Waffles

- Preheat the oven to 200°C, fan 180°C, gas mark 6. In a small bowl, combine the honey and balsamic vinegar. Put the strawberries in a large bowl, then pour over the balsamic vinegar mixture. Set aside to macerate for 10 minutes.
- Tip the strawberries and the macerating liquid into a large baking dish. Roast for 10 minutes, or until tender. Remove from the oven and set aside to cool.
- In a small bowl, combine the yogurt, crème fraîche and vanilla bean extract.
- Divide the waffles between plates and spoon over the baked strawberries. Top with the vanilla yogurt mixture, then drizzle over the baking juices and serve garnished with the mint leaves.
