Baked balsamic strawberries with waffles
2 tablespoons, level
500 g, hulled and halved
0% fat natural Greek yogurt
Half Fat Crème Frâiche
½ teaspoons, level
2 sprig(s), leaves to serve
- Preheat the oven to 200°C, fan 180°C, gas mark 6. In a small bowl, combine the honey and balsamic vinegar. Put the strawberries in a large bowl, then pour over the balsamic vinegar mixture. Set aside to macerate for 10 minutes.
- Tip the strawberries and the macerating liquid into a large baking dish. Roast for 10 minutes, or until tender. Remove from the oven and set aside to cool.
- In a small bowl, combine the yogurt, crème fraîche and vanilla bean extract.
- Toast the waffles, then divide the waffles between plates and spoon over the baked strawberries. Top with the vanilla yogurt mixture, then drizzle over the baking juices and serve garnished with the mint leaves.
