Baked balsamic strawberries with waffles

Give strawberries some oomph by roasting with balsamic vinegar and honey

Ingredients

Honey

2 tablespoon(s), level

Toasting waffle

8 individual

Balsamic vinegar

2 tablespoon(s)

Strawberries

500 g, hulled and halved

0% fat natural Greek yogurt

100 g

Half Fat Crème Frâiche

50 g

Vanilla Extract

½ teaspoon(s), level

Mint, Fresh

2 sprig(s), leaves to serve

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. In a small bowl, combine the honey and balsamic vinegar. Put the strawberries in a large bowl, then pour over the balsamic vinegar mixture. Set aside to macerate for 10 minutes.
  2. Tip the strawberries and the macerating liquid into a large baking dish. Roast for 10 minutes, or until tender. Remove from the oven and set aside to cool.
  3. In a small bowl, combine the yogurt, crème fraîche and vanilla bean extract.
  4. Toast the waffles, then divide the waffles between plates and spoon over the baked strawberries. Top with the vanilla yogurt mixture, then drizzle over the baking juices and serve garnished with the mint leaves.

Notes

If you like, you could also serve this with torn fresh basil leaves in place of the mint.
