Try this French toast with a twist! Instead of using regular bread, it uses sliced of batch-cooked avocado banana bread. Topped with fresh strawberries, it’s a great brunch for two.

Ingredients

Unsweetened almond drink

60 ml

Ground Cinnamon

¼ teaspoon(s), level

Egg, whole, raw

1 large, raw

150 g, sliced

Instructions

  1. In a shallow baking dish, whisk together the almond milk, cinnamon and egg. Cut the avocado banana bread slices in half, then put them in the dish in a single layer and let them soak for 1-2 minutes on each side.
  2. Mist a large nonstick frying pan with cooking spray and set over a medium-low heat. Add the bread and cook for 2-4 minutes on each side, until browned and crisp.
  3. Divide the French toast between plates and dust over the icing sugar. Top with the strawberries and serve.
