Air-fryer coconut prawns
Super-crunchy on the outside and succulent on the inside, these easy-to-make prawns are great to serve as an appetiser when you have friends around.
Egg, whole, raw
2 medium, raw
25 g, panko

- Preheat the air fryer to 200°C. Put the cornflour on a large plate. Season and mix to combine. Beat the eggs in a large shallow bowl. Mix the coconut flakes and panko breadcrumbs together on another large plate.
- Toss each prawn in the cornflour and shake off any excess. Dip into the eggs, allowing any excess to drip off. Press into the breadcrumb mixture, turning until completely covered then transfer to a large baking tray. Mist all the prawns with cooking spray.
- Mist the air fryer basket with cooking spray. Arrange half the prawns in the basket in a single layer and cook for 4-5 minutes until crisp and golden. Repeat with the remaining prawns.
