Notes

Mix together 1 tbsp soy sauce, zest and juice of half a lemon, finely chopped lemon grass (1cm length) and 1/4 tsp grated root ginger. Use it to baste a gammon steak and grill for 4 minutes per side, basting often. Serve with mange tout beans and boiled potatoes.
