Wasabi Mashed Potatoes

We spiked these mashed potatoes with wasabi-powder and wow, do they have fantastic flavor. Excellent with roast chicken, pork or beef.
uncooked potato(es)4 medium, peeled and cut into large chunks (about 2 lbs)
2% reduced fat milk½ cup(s)
wasabi powder1 tsp, or more to taste
reduced-fat sour cream2 Tbsp
salted butter1 Tbsp
chives1 Tbsp, fresh, minced
table salt½ tsp
- Boil potatoes in a large pot of water over high heat until very tender when pricked with a fork, about 15 to 20 minutes; drain and mash potatoes with a hand masher or electric mixer.
- Heat milk in a small saucepan over medium heat for 5 minutes; add wasabi powder and stir to dissolve. Add milk mixture, sour cream, butter, chives and salt to potatoes; stir to combine. Yields a generous 1/2 cup per serving.
