Fresh cranberries and orange juice give the dressing for this salad recipe a sweet-tart note. It's a wonderful grain side dish for roasted turkey or fall pork dishes. We also love how easy it is to make, as most of the cook time is totally hands-off. Just keep in mind that the wheat berries will take around an hour to cook. The dressing comes together in minutes thanks to using the blender. As well as the cranberries and orange juice, it's made with shallots, walnut oil, a touch of sugar, and fresh thyme. Pour the dressing over the wheat berries, celery, and apples, top with some toasted walnuts, and your beautiful-looking, hearty salad is ready to go.

Ingredients

Uncooked wheat berries

Water

3½ cup(s)

Table salt

Fresh cranberries

cup(s), whole, fresh, or frozen and defrosted

Unsweetened orange juice

2 Tbsp

Shallot

2 Tbsp, chopped, minced

Walnut oil

1 Tbsp

Sugar

Fresh thyme

1 tsp, chopped

¼ tsp, or to taste

Black pepper

tsp, freshly ground, or to taste

Celery

2 rib(s), medium, chopped small

Granny Smith apple

1 medium, chopped small

Chopped walnuts

¼ cup(s), toasted

Instructions

  1. In a medium saucepan, combine wheat berries, water and 1/2 teaspoon salt; bring to a boil over high heat. Reduce to a simmer, cover and cook until wheat berries are tender but retain some chew, about 1 hour.
  2. Meanwhile, puree cranberries, orange juice, shallot, oil, sugar, thyme, salt and pepper in a blender.
  3. When wheat berries are done, drain and return to saucepan. Stir in cranberry dressing, celery, apple and walnuts. Yields about 3/4 cup per serving.
