Warm apple, Canadian bacon, and spinach pasta salad
Uncooked Canadian bacon
Chardonnay white wine
¼ cup(s), or other dry white wine
1 medium, sweet variety, cored and thinly sliced
Fat-free reduced sodium chicken broth
Fresh baby spinach
2 oz, whole wheat
- Lightly coat the inside of a large nonstick skillet with cooking spray; set skillet over medium heat for a couple of minutes. Add Canadian bacon and cook, stirring often, until browned at the edges, about 3 minutes.
- Pour in wine, increase heat to high, and reduce liquid to half its original volume, stirring once in a while, about 2 minutes. Add apple and thyme; cook until fragrant, about 1 minute.
- Add broth and bring to a full simmer. Stir in spinach, pasta and pepper. Cook, stirring all the while, until spinach begins to wilt, and everything is well coated with sauce, about 1 minute. Divide between 2 serving plates.
- Serving size: 1 1/2 cups.
