Twice baked apple with cinnamon-vanilla yogurt sauce

Think of this as apple pie a la mode—minus the crust. Use your favorite apple varieties, red or green. This beautiful-looking dessert is so fresh and delicious, and you'll the fact that it comes together in less than half an hour. It's lightened thanks to using applesauce and Splenda for the sweeteners. The vanilla nonfat yogurt provides the finishing touch. Bonus: You won't even have to turn on the oven or stovetop, as everything gets heated through in the microwave, so you can basically make this dessert at any time. It really doesn't get much more convenient than that!


Ingredients
Apple
4 small
Splenda Brown Sugar Blend
1 Tbsp, packed
Unsweetened applesauce
1 cup(s)
Ground cinnamon
½ tsp, divided
Water
¼ cup(s)
Fat free vanilla yogurt
16 oz
Chopped walnuts (unsalted, raw or dry roasted, no sugar added)
4 tsp, or pecans, toasted
Instructions

Core apples, leaving bottoms intact so that apples can be filled. Place apples, upright, in a small glass microwave safe baking dish.

In a small bowl, combine applesauce, 1/4 teaspoon cinnamon and Splenda®; spoon evenly into apples.

Pour water around apples, into bottom of baking dish; cover and place in microwave. Cook at medium power until apples are soft but hold their shape, about 12 to 15 minutes. Remove from microwave and allow to cool to desired temperature.

Stir Weight Watchers® Vanilla Nonfat Yogurt and spoon 1/2 cup over each apple; garnish with a sprinkle of remaining cinnamon and nuts. Yields 1 apple per serving.
