These Turkish sandwiches celebrate the intricate flavors and aromas of Mediterranean vegetables and herbs. The refreshing yogurt sauce is not for kebabs only. Drizzle it on salad greens or sandwiches, or use it as a low-fat dip with your favorite cut-up veggies.To warm the pitas, place them on a microwavable plate, cover with plastic wrap, turning back one corner to vent, and microwave on High for 10 seconds. Or wrap the pitas in foil and heat them for 2 to 3 minutes on a lower rack in the oven while the kebabs are cooking.

Ingredients

Plain fat free yogurt

Fresh lemon juice

Peppermint leaves

Uncooked boneless skinless turkey breast

1 pound(s), cutlets, cut into 12 pieces

Uncooked eggplant

½ pound(s), unpeeled and cut into 8 (2-inch) chunks

Plum tomato

2 medium, quartered

Green bell pepper

1 medium, seeded and cut into 8 (1 1⁄2-inch) pieces

Olive oil

1 Tbsp, extra-virgin

Rosemary

1 Tbsp, fresh, chopped

Fresh parsley

1 Tbsp, fresh, chopped

Dried oregano

1 Tbsp

Romaine lettuce

¼ cup(s), shredded, or 4 small leaves, shredded

Whole wheat pita

Instructions

  1. Combine the yogurt, lemon juice, mint, garlic, 1⁄4 teaspoon of the salt, and the cayenne in a small bowl. Cover and refrigerate until ready to use, at least 15 minutes or up to overnight.
  2. Combine the turkey, eggplant, tomatoes, bell pepper, oil, rosemary, parsley, oregano, and the remaining 1⁄2 teaspoon salt in a large bowl; toss to coat.
  3. Spray a broiler rack with nonstick spray. Preheat the broiler.
  4. Alternately thread the turkey, eggplant, tomatoes, and bell pepper on 4 (12-inch) metal skewers. Place the kebabs on the broiler rack and broil, 4 inches from the heat, turning at least once, until the turkey is cooked through and the vegetables are tender, 12–14 minutes.
  5. Divide the lettuce among the pitas. Remove the skewers from the kebabs and place the food on top of the lettuce. Drizzle with the yogurt sauce. Fold up to eat.
