These Turkish sandwiches celebrate the intricate flavors and aromas of Mediterranean vegetables and herbs. The refreshing yogurt sauce is not for kebabs only. Drizzle it on salad greens or sandwiches, or use it as a low-fat dip with your favorite cut-up veggies.To warm the pitas, place them on a microwavable plate, cover with plastic wrap, turning back one corner to vent, and microwave on High for 10 seconds. Or wrap the pitas in foil and heat them for 2 to 3 minutes on a lower rack in the oven while the kebabs are cooking.
