When making any kind of bread, the key to success is nailing the texture; a great slice will be perfectly moist but still fully cooked. In this recipe for sweet pear bread, we've added a somewhat surprising ingredient to create an extremely moist and sweet cake: sugar-free, diet cola. It might sound odd, but this addition to the savory cake will balance out the unsweetened pears precisely. Although there's no bad time for cake, this recipe is ideal for a crisp fall day. It's the perfect complement to a cup of hot cider or even a glass of eggnog.
