Sweet-Heat Chocolate Disks

semisweet chocolate chips6 Tbsp
crystallized ginger4 Tbsp, and/or jalapeno, fresh mint, red pepper flakes, pink peppercorns
- Line a small baking sheet with wax paper.
- Place chocolate in a small microwavable bowl; microwave for about 90 seconds - stop and stir every 15 seconds until melted. Spoon melted chocolate onto prepared baking sheet in 8 even rounds.
- Sprinkle each round with desired toppings; refrigerate a minimum of 20 minutes. Keep refrigerated until ready to serve.
