Bring the feeling of summer to your table all year long with this tantalizing shrimp salad. A great twist on the traditional idea of a veggie-filled shrimp salad, this one is packed with tart and luscious fruit. The simple lemon vinaigrette works well with the tart apple, tangy mango and rich papaya, all combined with the kick of jalapeno. While the shrimp marinate, prep the fruit, onion, and jalapeño for the salad. Serve this over a bed of greens or on its own. This dish is beautiful and so fresh it is ideal for special occasions like Mother's Day or Easter.

Ingredients

Fresh lemon juice

¼ cup(s)

Olive oil

Table salt

¼ tsp

Black pepper

¼ tsp

Cooked frozen shrimp

1¼ pound(s), large, peeled and deveined

Granny Smith apple

1 large, cored and cut into thin pieces

Mango

1 medium, peeled, pitted, and diced

Papaya

1 item(s), small, peeled, halved, seeded, and diced

Red onion

½ cup(s), chopped, thinly sliced

Jalapeño pepper

1 medium, seeded and minced

Cilantro

2 Tbsp, chopped

Instructions

  1. To make dressing, whisk together lemon juice, oil, salt, and black pepper in small bowl.
  2. Transfer 2 tablespoons dressing to large bowl. Add shrimp and let stand 10 minutes.
  3. Add apple, mango, papaya, onion, jalapeño, and cilantro and toss to coat.
  4. Serving size: 1 1/2 cups
