Shrimp Salad with Papaya and Mango

cooked shrimp1 ¼ pound(s), large, peeled and deveined
Granny Smith apple1 large, cored and cut into thin pieces
mango(es)1 item(s), peeled, pitted, and diced
papaya(s)1 item(s), small, peeled, halved, seeded, and diced
uncooked red onion(s)½ cup(s), chopped, thinly sliced
jalapeño pepper(s)1 medium, seeded and minced
cilantro2 Tbsp, chopped
- To make dressing, whisk together lemon juice, oil, salt, and black pepper in small bowl.
- Transfer 2 tablespoons dressing to large bowl. Add shrimp and let stand 10 minutes.
- Add apple, mango, papaya, onion, jalapeño, and cilantro and toss to coat.
- Serving size: 1 1/2 cups
