Steel-cut oats are the perfect hearty base for this savory breakfast dish. Ready in under an hour, these oats are dressed with kale and turkey bacon for a warm and inviting twist on the American classic oatmeal. Serve alongside some cut fruit or, on a brunch buffet with a green salad topped with orange sections and goat cheese for a bright and sunny side. Different oat brands may have water ratios and cook times that are different than what is stated for this recipe.

Ingredients

Scallions

4 medium, sliced

Garlic

1 clove(s), thinly sliced

Uncooked steel cut oats

1 cup(s), preferably Quaker

Water

3 cup(s)

Table salt

¾ tsp

Frozen chopped kale

1 cup(s)

Black pepper

¼ tsp

Cooked turkey bacon

4 slice(s), crisp-cooked, torn into small pieces

Olive oil cooking spray

Instructions

  1. Spray medium saucepan with olive oil nonstick spray and set over medium heat. Add scallions and garlic and cook, stirring occasionally, until softened, about 3 minutes.
  2. Add oats, water, and salt to scallion mixture and bring to boil. Reduce heat and simmer, covered, 15 minutes. Stir in kale and pepper and cook, covered, until oats have softened and most of water is absorbed, about 15 minutes longer.
  3. Divide oat mixture evenly among 4 bowls and sprinkle with bacon.
  4. Per serving: 1 cup oat mixture and 1 slice bacon
