Savory steel-cut oats with kale
4 medium, sliced
1 medium clove(s), thinly sliced
uncooked steel cut oats
1 cup(s), preferably Quaker
frozen chopped kale
cooked turkey bacon
4 slice(s), crisp-cooked, torn into small pieces
olive oil cooking spray
- Spray medium saucepan with olive oil nonstick spray and set over medium heat. Add scallions and garlic and cook, stirring occasionally, until softened, about 3 minutes.
- Add oats, water, and salt to scallion mixture and bring to boil. Reduce heat and simmer, covered, 15 minutes. Stir in kale and pepper and cook, covered, until oats have softened and most of water is absorbed, about 15 minutes longer.
- Divide oat mixture evenly among 4 bowls and sprinkle with bacon.
- Per serving: 1 cup oat mixture and 1 slice bacon
