Savory Steel-Cut Oats with Kale

We used Quaker oats in this recipe. If you use a different brand, keep in mind that the amount of water and the cooking time may be different than what is stated in the recipe.


uncooked scallion(s)

4 medium, sliced

garlic clove(s)

1 medium clove(s), thinly sliced

uncooked steel cut oats

1 cup(s), preferably Quaker


3 cup(s)

table salt

¾ tsp

frozen chopped kale

1 cup(s)

black pepper

¼ tsp

cooked turkey bacon

4 slice(s), crisp-cooked, torn into small pieces

olive oil cooking spray

1 spray(s)


  1. Spray medium saucepan with olive oil nonstick spray and set over medium heat. Add scallions and garlic and cook, stirring occasionally, until softened, about 3 minutes.
  2. Add oats, water, and salt to scallion mixture and bring to boil. Reduce heat and simmer, covered, 15 minutes. Stir in kale and pepper and cook, covered, until oats have softened and most of water is absorbed, about 15 minutes longer.
  3. Divide oat mixture evenly among 4 bowls and sprinkle with bacon.
  4. Per serving: 1 cup oat mixture and 1 slice bacon
