Traditional oats get a tasty makeover with the addition of spinach and Parmesan cheese, perfect for both kids and adults. Make this for a crowd with ease on brunch-worthy holidays.

Old-fashioned rolled oats

Fresh baby spinach

  1. Spray 8-cup glass measure or microwavable bowl with nonstick spray. Add scallions and microwave on High until softened, about 1 minute.
  2. Add water, oats, and salt to scallions. Cover with piece of plastic wrap with one edge folded back to vent, or cover with microwavable plate. Microwave on High until oats are thickened, about 8 minutes, stirring every minute.
  3. Stir spinach and pepper into oat mixture. Let stand, covered, until spinach is wilted, about 1 minute. Spoon evenly into 4 bowls; sprinkle with Parmesan and drizzle with oil.
  4. Per serving: 1 cup oatmeal, 1 tablespoon cheese, and 1/2 teaspoon oil
