Ingredients

Uncooked scallion(s)

2 medium

Water

3.5 cup(s)

Old-fashioned rolled oats

2 cup(s)

Table salt

Fresh baby spinach

2 cup(s)

Black pepper

Grated Parmesan cheese

0.25 cup(s)

Extra virgin olive oil

Spray 8-cup glass measure or microwavable bowl with nonstick spray. Add scallions and microwave on High until softened, about 1 minute.

Add water, oats, and salt to scallions. Cover with piece of plastic wrap with one edge folded back to vent, or cover with microwavable plate. Microwave on High until oats are thickened, about 8 minutes, stirring every minute.

Stir spinach and pepper into oat mixture. Let stand, covered, until spinach is wilted, about 1 minute. Spoon evenly into 4 bowls; sprinkle with Parmesan and drizzle with oil.

Per serving: 1 cup oatmeal, 1 tablespoon cheese, and 1/2 teaspoon oil
