Ingredients

olive oil cooking spray

2 spray(s)

uncooked turkey sausage(s)

8 oz, red bell pepper and basil variety, cut into 1/2-inch slices

olive oil

1 tsp

minced garlic

1 Tbsp, or to taste

uncooked vidalia onion(s)

1 medium, thinly sliced

sweet red pepper(s)

1 medium, thinly sliced

green pepper(s)

1 medium, thinly sliced

balsamic vinegar

1 Tbsp

Italian bread

8 oz, about 1 medium loaf

Instructions

  1. Coat a large nonstick skillet with cooking spray and set over medium heat. Sauté sausage until browned, about 5 minutes; remove to a plate and cover to keep warm.
  2. Add oil to same skillet and heat for about 45 seconds; add garlic and sauté until golden, about 30 seconds. Add onion and sauté for 3 minutes. Add peppers and sauté until vegetables are softened, about 6 to 8 minutes more.
  3. Stir in vinegar and then return sausage to skillet; toss to combine.
  4. Split bread lengthwise—almost, but not all the way through; fill with sausage mixture. Cut into 4 equal pieces and serve. Yields 1/4 of hero per serving.
