Pureed fruit and/or vegetables add incredible flavor and body to salad dressings. Amp-up your salad game with this brightly colored and deeply flavorful dressing, ready-to-serve in just 10 minutes. Sherry vinegar gives this dressing its piquant tang. Serve it over a garden salad for a stunning contrast to the leafy greens or try it as a sauce for a flaky white fish. Wilted greens and a simple grilled chicken breast will also pair well with this dressing. Feel free to add a little water to thin the dressing if it becomes too thick.

Ingredients

Roasted red peppers (packed in water)

1 cup(s), rinsed, drained, chopped

Olive oil

1 Tbsp

Sherry vinegar

2 tsp

Jarred minced garlic

1 tsp

Kosher salt

Black pepper

Instructions

  1. Process all ingredients in a small food processor or blender until smooth.
