Roasted radishes and green beans with toasted sesame seeds

The spicy crunch of a raw radish is tamed into a soft, crunchy and slightly sweet addition to green beans in this colorful recipe. Impress friends with the transformative roasted side, ready in about 45 minutes. The color of the radishes gets a little muted but still pops agains the bright green beans. Try the radishes with baby kale for an easy variation. Serve alongside a grilled or roasted flank steak, thinly sliced. A smooth puree of cauliflower rounds out the plate with color and texture.

Uncooked string beans
½ pound(s), ends trimmed, halved crosswise
Radishes
8 large, quartered lengthwise (1/2 lb)
Extra virgin olive oil
1 tsp
Kosher salt
¼ tsp
Soy sauce
1 tsp
Fresh lime juice
1 tsp
Dark sesame oil
1 tsp
Scallions
1 medium, thinly sliced
Sesame seeds
1 Tbsp, toasted

Preheat oven to 450°F. Line a large rimmed baking sheet with nonstick foil or regular foil coated with cooking spray, or coat pan with cooking spray.

Place string beans and radishes on prepared pan; drizzle with olive oil and toss to coat. Sprinkle with salt and toss to coat; spread into an even layer.

Roast 10 minutes; remove from oven and toss. Roast until tender and light golden in spots, 5 minutes more.

Meanwhile, combine soy sauce, lime juice and sesame oil in a small cup. Put roasted vegetables into a serving bowl; drizzle with soy mixture and toss to coat. Sprinkle with scallion and sesame seeds; serve.
