Roasting radishes tames their spicy flavor, making them more appealing to picky vegetable eaters.

Ingredients

cooking spray

2 spray(s)

uncooked string beans

½ pound(s), ends trimmed, halved crosswise

fresh radish(es)

8 large, quartered lengthwise (1/2 lb)

extra virgin olive oil

1 tsp

kosher salt

¼ tsp

soy sauce

1 tsp

fresh lime juice

1 tsp

dark sesame oil

1 tsp

uncooked scallion(s)

1 medium, thinly sliced

sesame seeds

1 Tbsp, toasted

Instructions

  1. Preheat oven to 450°F. Line a large rimmed baking sheet with nonstick foil or regular foil coated with cooking spray, or coat pan with cooking spray.
  2. Place string beans and radishes on prepared pan; drizzle with olive oil and toss to coat. Sprinkle with salt and toss to coat; spread into an even layer.
  3. Roast 10 minutes; remove from oven and toss. Roast until tender and light golden in spots, 5 minutes more.
  4. Meanwhile, combine soy sauce, lime juice and sesame oil in a small cup. Put roasted vegetables into a serving bowl; drizzle with soy mixture and toss to coat. Sprinkle with scallion and sesame seeds; serve.
  5. Serving size: 1 c

Notes

This recipe is also great with baby kale leaves instead of green beans. Use 3 bunches, cut in half.
