Roasted radishes and green beans with toasted sesame seeds
Uncooked string beans
½ pound(s), ends trimmed, halved crosswise
8 large, quartered lengthwise (1/2 lb)
Extra virgin olive oil
Fresh lime juice
Dark sesame oil
1 medium, thinly sliced
1 Tbsp, toasted
- Preheat oven to 450°F. Line a large rimmed baking sheet with nonstick foil or regular foil coated with cooking spray, or coat pan with cooking spray.
- Place string beans and radishes on prepared pan; drizzle with olive oil and toss to coat. Sprinkle with salt and toss to coat; spread into an even layer.
- Roast 10 minutes; remove from oven and toss. Roast until tender and light golden in spots, 5 minutes more.
- Meanwhile, combine soy sauce, lime juice and sesame oil in a small cup. Put roasted vegetables into a serving bowl; drizzle with soy mixture and toss to coat. Sprinkle with scallion and sesame seeds; serve.
