Red quinoa with parsley and pine nuts
1 cup(s), red variety
½ tsp, or to taste
white wine vinegar
extra virgin olive oil
⅓ cup(s), flat-leaf, chopped
3 Tbsp, toasted
- Bring water to boil in small saucepan; stir in quinoa and salt. Reduce heat and simmer, covered, until water is absorbed and quinoa is tender, about 15 minutes Remove saucepan from heat and let stand 5 minutes; fluff with fork.
- Whisk together vinegar, oil, and pepper in serving bowl. Add quinoa, parsley, and pine nuts and toss until mixed well. Taste and season with additional salt, if needed.
