Red Quinoa with Parsley and Pine Nuts

Quinoa has risen to star power. High in protein and fiber, it has a nutty flavor and invitingly chewy texture. Because its natural outer coating has a bitter flavor, always rinse quinoa unless it says prerinsed" on the package.

Ingredients

water

2 cup(s)

uncooked quinoa

1 cup(s), red variety

table salt

½ tsp, or to taste

white wine vinegar

1½ Tbsp

extra virgin olive oil

2 tsp

black pepper

¼ tsp

fresh parsley

cup(s), flat-leaf, chopped

pine nuts

3 Tbsp, toasted

Instructions

  1. Bring water to boil in small saucepan; stir in quinoa and salt. Reduce heat and simmer, covered, until water is absorbed and quinoa is tender, about 15 minutes Remove saucepan from heat and let stand 5 minutes; fluff with fork.
  2. Whisk together vinegar, oil, and pepper in serving bowl. Add quinoa, parsley, and pine nuts and toss until mixed well. Taste and season with additional salt, if needed.
  3. Per serving: generous 1/2 cup
