Quinoa parfait with peaches & pecans

Never tried quinoa in a parfait? Give it a go—you'll love it! The protein-packed grains have a pleasant pop on the tongue, and when tossed with a little bit of cinnamon, they lean a little sweet. Here we layer the spiced quinoa with honeyed Greek yogurt and juicy peaches and top with crunchy pecans. When peaches aren't in season, try any other fruit you like, such as berries, apples, or pears. It's great to keep a batch of cooked quinoa on hand to add a little protein to green salads, grain salads, or to make this delicious breakfast.
Plain fat free Greek yogurt
½ medium, chopped (about 1⁄4 cup)
- In a small bowl, stir quinoa and cinnamon. In another small bowl, whisk yogurt and honey. In a parfait glass or bowl, layer ¼ cup quinoa mixture, ¼ cup yogurt mixture, and ¼ cup peaches. Repeat layers once. Top with pecans.
