Here's the perfect in-season sauce for pasta, pizza burgers, frittatas and more.
Ingredients

olive oil

3 Tbsp

uncooked onion(s)

½ cup(s), chopped

minced garlic

2 Tbsp

fresh tomato(es)

2 pound(s), ripe, cored and diced

canned tomato paste

1 Tbsp

kosher salt

2 tsp

basil

½ cup(s), fresh, chopped

Instructions

  1. In a non-reactive saucepan, combine oil, onion and garlic; sauté over medium heat until onion is translucent, about 1 minute.
  2. Add tomatoes and their juices, tomato paste and salt; sauté until tomatoes begin to soften, about 1 minute.
  3. Cover pan, reduce heat to medium-low and cook until sauce consistency, about 5 minutes. Remove from heat; stir in basil.
  4. Serving size: 1/2 cup
