Keep a jar on hand at all times, and you'll be able to put together a quick lunch or dinner in minutes. You only need 7 ingredients to make it, which include olive oil and kosher salt. Just be sure to use a non-reactive pan (like stainless steel or enamel) when cooking with acidic foods like fresh tomatoes. The sauce couldn't be easier to make, as that is the only pan you need, and you cook down the ingredients in stages before letting them simmer and meld together. Stir in some fresh basil right before using for added brightness, color, and texture.

  1. In a non-reactive saucepan, combine oil, onion and garlic; sauté over medium heat until onion is translucent, about 1 minute.
  2. Add tomatoes and their juices, tomato paste and salt; sauté until tomatoes begin to soften, about 1 minute.
  3. Cover pan, reduce heat to medium-low and cook until sauce consistency, about 5 minutes. Remove from heat; stir in basil.
