This recipe features the Cuban sandwich combined with the quesadilla, two of our favorite dishes. The chipotle mayonnaise adds hot and smoky flavor to this mixed dish. Chipotle chiles in adobo sauce come in small cans and are found in the ethnic section of large supermarkets, in specialty food stores, and in Latin American markets. You may want to use more or fewer chipotles depending on your taste, as they can be quite spicy—or you may want to leave them out entirely. The quesadillas are also filled with sweet pickle relish, turkey ham, and Swiss cheese, keeping things light yet savory and delicious at the same time.

Ingredients

Fat free mayonnaise

2 Tbsp

Sweet pickle relish

1 Tbsp

Canned chipotle peppers in adobo sauce

1 item(s), small, chopped

Fat free flour tortilla

2 small, (6-inch)

Extra lean sliced turkey ham

2 oz, thinly sliced

Low fat Swiss cheese

cup(s), shredded, shredded

Instructions

  1. Combine the mayonnaise, relish, and chipotle in a small bowl.
  2. Spread the mayonnaise mixture over 1 tortilla, leaving a 1-inch border. Top with the ham and cheese, then cover with the remaining tortilla, pressing down gently.
  3. Heat a large nonstick skillet over medium-high heat. Place the quesadilla in the skillet and cook, occasionally pressing down gently with a spatula, until crisp on the bottom, about 11/2 minutes. Carefully turn the quesadilla and cook until it is crisp on the other side and the cheese is melted, about 11/2 minutes longer. Transfer quesadilla to a plate and cut into 4 wedges. Serve at once. Yields 2 wedges per serving.
