These pork chops don't take hours to marinade or require any special equipment; simply place the pork chops, flour, curry powder, and salt in a plastic bag and shake to coat the pork. Cook the pork in some hot oil for just about 3 minutes on each side, then add the yams, pears, pear juice, and thyme. Let all the ingredients get to know each other and the pork cook through, and you're done! It all takes less than 25 minutes to put together. For a slightly different flavor, you can use pineapple chunks or apricots in place of the pears or swap winter squash for the sweet potatoes.

Vegetable oil

Uncooked lean boneless pork chop

1 pound(s), four 4 oz pieces

Canned sweet yams in syrup

15 oz, drained

Canned pears in juice, drained

15 oz, drained, reserve 1/2 cup juice

Dried thyme

½ tsp

Black pepper

Instructions

  1. In a large nonstick skillet, heat oil.
  2. In a large sealable plastic bag, mix flour, curry powder and 1/4 tsp of salt. Add pork and shake to coat.
  3. Transfer pork to skillet. Sauté until cooked through, about 3 minutes on each side.
  4. Meanwhile, cut yams into bite-size chunks. Add to pork with pears, reserved pear juice, thyme, pepper and remaining 1/2 teaspoon of salt. Reduce heat and simmer until pork is cooked through, about 2 minutes longer.
